A Scottish Eggs Hebridean breakfast must be tried. The island of Stornoway makes damn fine black pudding and this eggs Benedict variation deploys this in place of ham. Cafe Gandolfi is this splendid room with decor which is the wood equivalent of a daring, but stylish double denim.

A Scottish breakfast is an uplifting first meal to start our day.
Bacon rasher (closely resembles thinly sliced ham), baked beans, black pudding, egg, sautéed mushrooms, potato or tattie, scone (rhymes with gone), link sausage or banger and half a tomato (broiled with cheese on top).

Staffordshire Oatcake I quite enjoy a breakfast recipe handed down by my Nan, who used to live in Staffordshire. A flat pancake made from oatmeal with sausages and mushrooms inside. Served with baked beans.

Have you tried a Welsh Laverbread in an overcoat breakfast? Comprises black pudding, fried egg(s), laverbread (inside an overcoat made from streaky bacon, scrambled eggs and toast) and fried sausages. Salmon is an optional alternative to streaky bacon for the overcoat mix.

An alternative Eggy Bread welsh breakfast is my favourite. Bacon, transcendental hunks of bread spread with beaten and cooked eggs, and served with maple syrup.

Spiced crab omelette is a great breakfast since can be eaten all-year round. Made from butter, shredded parmesan cheese, 1/4 pound drained and flaked crabmeat (backfin recommended), heavy whipping cream, 3 beaten eggs, 2 cloves minced garlic, 2 tablespoons olive oil, 1 chopped onion, 1/4 cup peas, 1 chopped red bell pepper, 1 small peeled and diced potato, 1 (1.5 ounce) box raisins, 1 small diced tomato and water. Add salt and freshly ground black pepper to taste.

Hash (farmhouse or Irish), fried eggs and homemade hash browns. Homemade hash browns made from 1 egg, 1/4 cup all-purpose flour, 1 cup oil for frying, and 1/2 medium finely chopped onion, 2 medium shredded russet potatoes, add salt and pepper. Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, mix in the onion, flour and egg until evenly distributed. Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown the other side. This should take at least 5 minutes per side. Should you be cooking them in one big piece, these can be cut into quarters for easier flipping. Remove from pan and drain on paper towels. Season with salt and pepper, and serve immediately.
